Beef Enchiladas

Try out these homemade beef enchiladas for a midweek meal, they taste as good as they look.

We have used Gia Chilli Puree in the sauce and the beef filling which gives it a spicy kick, add more or less depending on how you like it?

1 teaspoon of chilli puree is approx 2 small chilli peppers.

We also used our Gia Garlic Puree & Eazy Onions in this dish so no need for tears chopping up ingredients! If you have not tried them yet, what are you waiting for?

Prep Time: 15 Mins

Bake: 45 mins

Serves: 4 people


Beef Ingredients:

450g lean minced beef

1/2 can of Eazy Fried Onions

2 tbsp of plain flour

1 tsp Gia Chilli Puree

1 tbsp Tomato puree

1/2 tsp of Ground Cumin

1/4 tsp sage

1 tin of Chopped Tomatoes


Sauce Ingredients :

50g Butter

3 tsp Gia Garlic Puree

65g Plain Flour

400ml Beef Stock

400 ml Passata

1 tsp Gia Chilli Puree

1 tsp Ground Cumin

1 tsp Sage

1/2 tsp of salt

6 Tortillas

200g Gouda Cheese grated





Method:

1: Preheat the oven to 180℃

In a large pan, brown the beef and onion over medium heat (no need for oil), drain excess fluid.

2:Stir in the Flour then add Gia Chilli Puree, Tomato Puree, Cumin, Sage and chopped tomatoes; bring to a boil. Reduce heat to a simmer and cover with a lid for 15 mins.


3:In a saucepan, melt the butter with the Gia Garlic Puree over medium heat. Turn heat to low and gradually sieve in the flour whilst whisking, then add the beef stock slowly. Bring to the boil and stir until thickened, roughly 2 mins.


4:Add the Passata, Gia Chilli Puree, Cumin & Sage; heat through.


5:Pour enough sauce into a baking dish to cover all of the bottom bases, keep the rest of the sauce for step 7.


6:Place 6 tortillas down on a flat surface, place 4 tbsp of beef mixture in the centre on each tortilla; top with 2 tbsp of grated cheese.

Roll up each tortilla and place on top of the sauce seam side down.


7:Top with the remaining sauce. Bake, covered with foil until heated through for 35 mins.

Sprinkle over the remaining cheese.

Bake uncovered for a further 10 mins until the cheese is melted.
